Protein + 2 Veggies

I learned this from Robb Wolf … Paleo and Keto GURU. He doesn’t know this, but we are total besties. Well, My Robbo is besties with Robb and I’m besties with his wife, Nicki. (Yeah, crazy, right!?!? Rob and Niki x 2. {Head explodes!}

So, follow Robb Wolf online, on Podcasts, on IG, wherever. And, PLEASE, make time to read his books!!

Anyways … He has a great method to building a MEAL PLAN:

PROTEIN + 2 VEGGIES.

So simple. Robbo and I have done this for awhile without realizing it was an amazing life hack. Win. 

Make two lists.

List ONE: all the proteins / meats you eat. All.
Seafood, ground chicken, shredded chicken, whole chicken, chicken thighs, chicken meatballs, beef meatballs, ground beef, steak cuts, pork loin, pork chops, bratwurst, etc. ALL the meats.

List TWO: all the veggies you like. ALL.

Now, make a meal plan.
Pick one protein and 2 veggies. Voila! 
We usually also make this a One Pan Meal. Most likely roasting, but you could do saute / stir fry also.

Robbo will take chicken breast crusted in seasoned almond flour (see recipe below). This makes a batch big enough to use for multiple meals. Robbo does pound the chicken breast until it’s about 1/2 – 1 ” thick. Coat the chicken breast in the seasoned almond flour and place on half a baking sheet. Then, cut Brussels sprouts in half and cube sweet potatoes (~ cut into 1/2” cube) … coat with olive oil, salt and pepper. Roast in the oven until chicken is done. Usually 450′ for about 20-25 min. If the chicken is done, the veggies are usually perfectly done with a little crispy edge. 

RECIPE for breaded chicken breasts:
1 1/2 cups almond meal
3/4 cup almond flour (This is different from almond meal. It is finer grind).
1 1/2 tablespoons Kosher salt (Kosher salt is Robbo’s Go-To cooking salt)
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 1/2 teaspoons paprika
1/2 teaspoon oregano
1/2 teaspoon garlic powder

Bratwurst from Slow Poke Farm
Ground pork from Slow Poke Farm
Ground beef from Slow Poke Farm
Any sausage … Applegate has some yummy one’s. Pederson’s has some sausage, W30 bacon, breakfast sausage and more! Check the butcher counter too.
Chicken

Slow Poke Farm is also selling Windy Meadows Family Farm chicken. Joy places an order with Windy Meadows, but they are selling all sorts of chicken options!

We don’t really cook steak at home. We will sometimes do pork belly or pork chops, lamb chops, somethings like that …. that meat comes from Slow Poke Farm !!!

I love meatballs … that could be it’s own post. You can get SO creative with meatballs. Ground beef, chicken, pork, combo’s. It’s a great way to add liver into the mix (you’ll never even taste it). And pick a theme …. Asian theme meatballs. Moroccan meatballs. Indian. Mexican. Mediterranean. Just a few choice seasonings and sauces and you change it all up. Endless. Pick 2 veggies. Leftovers for lunch.
